Shepherd's Salad

Corban Salatası

 

This simple, colourful salad is a standard favourite all over Turkey. There are lots of variations, but this is my favouite version. The key is to have absolutely fresh, crunchy vegetables - then this sald makes sense.

 

Ingredients:

500g       cherry tomatoes, halved or quartered (or substitute regular tomatoes)

500g       small finger cucumbers, cut into chunks

1 tbsp    parsley, chopped well

1 tbsp    dill, chopped well  (optional)

½  sml    red onion, quartered and finely sliced

2 tbsp    lemon juice, freshly squeezed

4 tbsp    olive oil

½  tsp    salt

 

Chop all the vegetables and herbs into a large bowl and toss well.

Just before serving, toss through the lemon juice, olive oil and salt.

 

Variation:

Add 2 chopped green or yellow bull-horn chillis (biber)
