Pomegranate, Fetta and Mint Salad

A magical autumn salad. I await the advent of pomegranates in the markets every year with this dish in mind. A light salad of bold, contrasting flavours, it is perfect to accompany a BBQ, a special meal for guests, anything really...

 

2              rocket plants, roots cut off and leaves roughly chopped

1 med     red or green curly leaf lettuce, leaves roughly chopped

6              sprigs parsley, leaves picked and roughly chopped

6              sprigs mint, leaves, picked and roughly chopped

100g       fetta, diced

½            pomegranate, seeds extracted

 

for the dressing:

3 tbsp    pomegranate molases (nar ekşisi)

2 tbsp    olive oil

 

Toss all salad ingredients together in a large bowl. Just before serving, toss through the molasses and olive oil.
