
Cucumber and Yogurt Dip

You see variations of this dip popping up all over the Middle East, West Asia and India. The Turkish version has a thinner consistency with only the merest hint of garlic. And dill, of course – it wouldn’t be a Turkish mezze without dill.
2/3 cup plain yogurt
1/4 cup water
2 sprigs dill (dereotu), finely chopped
1 sml clove garlic, crushed (this will produce hardly any garlic, but that’s the
idea)
1 large cucumber, seeded then diced (or 2 sml cucumbers)
1/8 tsp salt
2 tsp olive oil, plus extra to garnish
Few mint leaves, to garnish
1. Mix the yogurt and water together with a fork until smooth.
2. Stir through the rest of the dip ingredients and mix until well combined.
3. Drizzle with olive oil and garnish with mint leaves, to serve.
